Ingredients:
To prepare the squash:
- 4 cups of butternut squash, purchase already cubed
- 1-2 tbsp olive oil
- Pinch of salt
To prepare the soup:
- 2 tbsp olive oil
- ¾ cup sweet onion finely chopped
- 3 cloves garlic, crushed
- 1 ¼ tsp ginger, crushed
- ¾ tsp salt
- ¼ tsp cinnamon
- Pinch cayenne pepper
- 1 can of light coconut milk
- 1-2 cups vegetable broth
- Cilantro (optional)
Directions:
- Preheat your oven to 425 degrees.
- Using your clean hands, place your cubed butternut squash on a large baking sheet and mix with olive oil and a pinch of salt. Bake in your oven for 40-50 minutes, or until squash is fork tender.
- Next sauté your vegetables. In a medium pot, combine 2 tablespoons of olive oil and your onion. Sauté over medium heat for 3-4 minutes. Add the garlic and ginger. Continue cooking over medium heat for about 1-2 minutes.
- Add the salt, cayenne, cinnamon, coconut milk, and broth, stirring to combine ingredients. Cover the skillet with a lid, reduce heat to low, and let ingredients simmer for 5 minutes.
- Once squash is done cooking, add the roasted squash and your coconut milk mixture to a high-speed blender. Blend for 2-3 minutes or until contents are completely smooth.
- Pour the soup back into the pot and reheat over medium to low heat, stirring to ensure even mixing.
- Serve soup immediately with a drizzle of coconut milk and fresh cilantro if desired and enjoy!
Optional “spruce-up my soup” additions:
- 1 scoop of black rice
- Roasted chicken or other protein of choice
