Ingredients:

  • 1 pound cooked shrimp 
    • Time-saving hack: Purchase your shrimp already cooked – fresh or frozen. 
  • 8 cups greens – choose your favorite! 
    • Is it arugula? spinach? spring mix?
  • 2 tbsp of extra virgin olive oil 
  • Juice of ½ lemon or 1 tablespoon of lemon juice
  • 1 avocado, diced
  • 1 shallot, minced
  • ½ cup of sliced roasted almonds
    • Other yummy options include pine nuts or pecans
  • Salt and black pepper to taste

    Directions:

    1. Prepare your shrimp. You can cook and cool your shrimp or purchase your shrimp already cooked – fresh or frozen. If frozen, defrost your shrimp in the fridge overnight.
    2. Toss the shrimp with the salad greens in a large bowl.
    3. Lightly drizzle with olive oil and your choice of citrus, and toss to coat.
    4. Add the avocado, shallots and sliced almonds and lightly season with salt and pepper Serve and enjoy!
