Ingredients:
- 1 pound cooked shrimp
- Time-saving hack: Purchase your shrimp already cooked – fresh or frozen.
- 8 cups greens – choose your favorite!
- Is it arugula? spinach? spring mix?
- 2 tbsp of extra virgin olive oil
- Juice of ½ lemon or 1 tablespoon of lemon juice
- 1 avocado, diced
- 1 shallot, minced
- ½ cup of sliced roasted almonds
- Other yummy options include pine nuts or pecans
- Salt and black pepper to taste
Directions:
- Prepare your shrimp. You can cook and cool your shrimp or purchase your shrimp already cooked – fresh or frozen. If frozen, defrost your shrimp in the fridge overnight.
- Toss the shrimp with the salad greens in a large bowl.
- Lightly drizzle with olive oil and your choice of citrus, and toss to coat.
- Add the avocado, shallots and sliced almonds and lightly season with salt and pepper Serve and enjoy!
